- Dust hard boiled eggs with flour. Wrap in shanghai mix then dip in beaten egg and roll in breadcrumbs, gently patting breadcrumbs in place. Chill in the refrigerator.
- Deep fry eggs for 7 minutes in a saucepan, turning occasionally. Drain on paper towels.
Makes 7 servings.
- Serve with ketchup or gravy.
- Garnish with parsley.
