EGG SALAD OPEN FACED SANDWICH


Ingredients:

6 pc MAGNOLIA BROWN EGGS, boiled and peeled
1/2 (115 g) cup MAGNOLIA REAL MAYONNAISE
1 (5 g) tsp prepared mustard
1 (10 g) pc calamansi, juice squeezed (1/2 tsp)
1/4 tsp iodized fine salt
1/8 tsp pepper
1 (15 g) bundle green onions, chopped (2 tbsp)
1/8 (0.57 g) tsp paprika
6 pc pandesal, sliced in half and lightly toasted

Procedure:

  1. Roughly chop hard-boiled eggs and transfer to a bowl. Mash yolks with a fork.
  2. Add mayonnaise, mustard, calamansi juice and green onion. Season with salt and pepper. Mix well.
  3. Slice bread in half. Top each half of pandesal with a tablespoon of the egg mixture. Sprinkle with paprika.

Makes 6 servings.
