DRIED MANGO COOKIES


Ingredients:

3/4 cup BAKER'S BEST MARGARINE
3/4 rbsp brown sugar
2 pc MAGNOLIA BROWN EGGS
2 cup MAGNOLIA ALL PURPOSE FLOUR
1 tsp baking powder
1 tsp cinnamon
1 cup dried mangoes, cut into small cubes and soaked in water for 10 minutes then drained
1 cup toasted cashew nuts, coarsley chopped

Procedure:

  1. Pre-heat oven to 350 F.
  2. Cream margarine and sugar until fluffy.
  3. Add eggs one at a time beating well after each addition.
  4. Mix together flour, baking powder and cinnamon.
  5. Pour dry ingredient mixture into the creamed margarine mixture. Mix slightly just to form a dough (do not overmix). Add 3/4 cup soaked mangoes.
  6. Drop dough by tablespoonfuls and form into a ball. Arrange on a slightly greased baking sheet.
  7. Make an indention at the center of the dough, put approximately 1/8 tsp. of the dried mangoes (2 grams) for each cookie. Bake for 9 minutes.
Makes 45 pieces.
