DAK GOMTANG (KOREAN CHICKEN SOUP)


Ingredients:

1 (1.2 kg) pc whole MAGNOLIA FREE RANGE CHICKEN
8 (2 L) cups water
1 (30 g) head garlic, peeled
1 (30 g) thumb ginger, peeled and sliced
2 (60 g) stalks onion leeks, separate white stalk and leaves sliced
1 (120 g) pc onion, sliced in half
1 (8.87 g) tbsp peppercorns

Soy Dipping Sauce

1/4 cup dark soy sauce
1/8 cup cane vinegar

Spicy Dipping Sauce

2 tbsp Gochujang paste
1 clove garlic, minced
3 tbsp chicken stock

Side dish

1 (150 g) cup kimchi

Procedure:

  1. Combine soy dipping sauce ingredients in a bowl and set aside.
  2. Combine spicy dipping sauce ingredients in another bowl and set aside.
  3. Combine chicken breast side down, water, garlic, ginger, white part of leeks, onion, and peppercorns in a stock pot. Simmer covered for 15 minutes. Turn chicken and simmer for another 15 minutes. 
  4. Place in a large serving bowl. Top with onion leeks. Serve with dipping sauces and kimchi.

 

Makes 8 servings.
(Yield: 5 cups broth, 8 pc chicken /1 pc per serving)
