CRISPY MANGO WONTONS


Ingredients:

1/3 cup powdered sugar
1 (225 g) bar MAGNOLIA CREAM CHEESE, softened
1/2 tsp vanilla extract
1 cup cubed mangoes
40 pc large wonton wrappers
2 tbsp cornstarch, dissolved in 1/4 cup water then boiled to make a paste
cooking oil for frying
green candy strings for garnish

Sauce

1 (250 mL) pack MAGNOLIA PURE FRESH MILK
1 (250 mL) pack MAGNOLIA ALL-PURPOSE CREAM
1/3 cup sugar
3 pc star anise
4 pc MAGNOLIA BROWN EGGS, egg yolks only
1/2 tsp almond extract

Procedure:

  1. Beat together cream cheese, powdered sugar and vanilla until fluffy. Fold in mangoes.
  2. Spoon every 2 teaspoons of filling in the center of wrappers. Apply cornstarch paste on the edges and fold like parcels. Set aside.
  3. Heat oil to 175°C-190°C. Fry wontons until golden brown. Tie the candy strings around wanton parcels.
  4. Sprinkle powdered sugar on the wontons. Spoon about 2 tablespoons of the sauce on each plate and swirl the sauce. Place 3 wontons at the center of the plate.
  5. Sauce: Heat milk, cream, sugar and star anise. Temper mixture into the yolks. Return to heat and cook until slightly thick. Strain. Add almond extract and chill in ice bath.
Makes 13-14 servings.
