CRISPY FRIED CHICKEN PARMIGIANA STYLE


Ingredients:

2 tbsp olive oil
2 cloves garlic, chopped
1-1/2 cups tomato puree
1 tsp Italian seasoning
iodized fine salt and pepper to taste
1 pack (450 g) MAGNOLIA CHICKEN TIMPLADOS FRIED CHICKEN, cooked according to package directions
250 grams spaghetti noodles, cooked according to package directions
1 cup (225 g) grated mozzarella cheese
2 stalks (10 g) parsley, chopped (2 tbsp)

Procedure:

  1. In a saucepan, heat olive oil. Sauté garlic until fragrant just until it starts to brown.
  2. Add tomato sauce and italian season. Bring to a gentle simmer for 10-15 minutes. Season with salt and pepper. Remove from heat and set aside.
  3. Meanwhile, deep-fry prepared chicken in oil. Fry until golden brown. Drain excess oil on paper towels and set aside.
  4. In a baking dish (can also be in individual baking dishes), place noodles and then top with half of sauce, fried chicken and then the remaining sauce.
  5. Sprinkle with mozzarella and Parmesan cheese.
  6. Bake in a preheated oven set to 204oC (400oF) for 10 minutes until cheese is melted and golden brown.
  7. Remove from oven and garnish with parsley and serve immediately.

Makes 4 servings.
