eggplant, sliced into rings 1/2 inch thick
1 (50 g)
beef bouillon cube
store bought cooked bagoong alamang
In a pan, heat oil and fry eggplant slices for 3 minutes on each side. Set aside.
In the same pan, sauté onion, garlic and tomatoes until veggies are tender. Pour water and beef cube. Bring to boil then lower heat and add bagoong alamang. Stir and cook covered over low to medium heat for about 3-5 minutes. Stir in eggplant.
Pour binagoongan sauce on a platter then top with crispy pata or serve binagoongan sauce on the side.
