CREMA CATALANA


Ingredients:

2-1/2 cups MAGNOLIA FRESH MILK
1(395 g) can condensed milk
1/2 cup sugar
8 pc MAGNOLIA BROWN EGGS, use egg yolks
2 tbsp dayap, zest
3 tbsp sugar

Procedure:

  1. Preheat oven to 350°F.
  2. Combine milk, sugar, eggs and dayap in a bowl.  Mix until well blended. Strain mixture using a cheese cloth or fine mesh strainer. Pour into ramekins.  Steam or bake in oven on a water bath (baine marie) for 2 hours or until done. Chill.
  3. Before serving, sprinkle sugar over each flan and broil in an oven until sugar caramelizes and turns golden brown. Serve immediately. 

Makes 6 servings.
