CHRISTMAS HAM


Ingredients:

1 (5 kg) whole PUREFOODS FIESTA HAM BONE-IN

Sauce:

1-1/2 liters unsweetened pineapple juice
2 (330 mL each) bottles SAN MIGUEL PALE PILSEN
3 pc bay leaves (laurel)
1/2 tsp dried oregano
2 tbsp cinnamon powder
2 tbsp iodized fine salt
1 cup sugar
1/4 cup peppercorns
8 pc whole cloves

Glaze:

1 cup crushed pineapples
3 cups sugar

Garnish:

1 kg grapes
4 pc apples, sliced
4 pc oranges, sliced
1/2 cup powdered sugar

Procedure:

  1. Combine all sauce ingredients in a large pot together with the ham. Cover and simmer for 30 minutes.
  2. Remove ham. Reduce sauce by simmering uncovered for 30 minutes over high heat, and then set aside.
  3. To make the glaze, combine crushed pineapples and sugar in a bowl and mix well. Spread glaze on top of the ham and press a flat heated turner over glaze to caramelize or melt sugar.
  4. Place ham on a platter, garnish with fruits and dust with powdered sugar. Serve with sauce on the side.

Makes 50-75 servings
