CHINESE LUNCHEON MEAT BOK CHOY RICE


Ingredients:

1 tbsp cooking oil
1 can (350 g) PUREFOODS CHINESE STYLE LUNCHEON MEAT, cubed
3 pc MAGNOLIA BROWN EGGS
2 tbsp light soy sauce
1 thumb (10 g ) ginger, grated or finely chopped
1 pack (200 g) bok choy, ends trimmed and sliced
1 bundle (100 g) green onions, chopped
6 cups chilled cooked rice
1 tbsp sesame oil

Procedure:

Procedure: 
 
1. Heat oil in a non-stick pan and sauté ginger and then luncheon meat. Lightly sauté until meat is lightly browned.
2. Make a well in the center and add half of sesame oil and eggs. Cook until almost set and then scramble. Mix with meat mixture.
3. Add soy sauce, bok choy, green onions and rice. Mix well and cook until heated through. Add remaining sesame oil. Mix well and serve.
 
Makes 9 servings.
(Yield: 9 cups/1 cup per serving
