CHICKEN WITH GARLIC-PARSLEY SAUCE


Ingredients:

5 (1/2 kg) pc MAGNOLIA SMART PACK BREAST FILLETS
1/2 tsp iodized fine salt
5 clove garlic, finely crushed
1/4 tsp crushed peppercorns
1/2 tsp chili pepper flakes (optional)

GARLIC-PARSLEY SAUCE:

10 cloves garlic, pounded into a paste
2 tbsp calamansi juice
1 tbsp honey
1/3 cup chopped parsley
1/8 tsp iodized fine salt
1/4 tsp white pepper
1/3 cup virgin olive oil  

BREADING:

2 pc MAGNOLIA BROWN EGGS, beaten
1 cup Japanese breadcrumbs
1/2 cup cooking oil

Procedure:

  1. Rub chicken with salt, garlic, peppercorns, and chili flakes. Marinate for 15 minutes.
  2. Meanwhile, combine garlic paste, calamansi juice, honey, parsley, salt, and pepper. Whisk in slowly olive oil until well blended. Set aside.
  3. Dip chicken fillets in eggs then dredge in bread crumbs. Fry in hot oil until cooked and golden brown. Drain on paper towels annd top with garlic-parsley sauce or serve sauce on the side.
