CHICKEN HARDINERA



Ingredients:

2 tbsp cooking oil plus extra oil for greasing
1 tbsp chopped garlic
2 tbsp chopped onions
1/4 cup pickle relish
1/4 cup pineapple chunks
1 pc red bell pepper strips
1/2 cup cubed PUREFOODS LUNCHEON MEAT
1/4 kg MAGNOLIA CHICKEN STATION FILLETS, boiled and cut into 1/2" cubes
1/4 kg MAGNOLIA CHICKEN STATION THIGH FILLETS, boiled and cut into 1/2” cubes
1/4 cup banana ketchup
1 tsp pepper
9 pc MAGNOLIA BROWN EGGS, 4 pc boiled and sliced, then 5 pc slightly beaten
8 pc PUREFOODS LUNCHEON MEAT strips

Procedure:

  1. Prepare 4 llaneras by lining bottom with banana leaves. Grease sides with oil. Set aside.
  2. Sauté garlic in hot oil until slightly browned. Add onions and sauté until slightly wilted. Add the rest of the ingredients except eggs and luncheon meat strips. Cook for about 3 to 5 minutes.
  3. Arrange luncheon meat strips and egg slices in prepared llaneras. Divide half of beaten eggs among llaneras then pour hardinera mixture. Pour remaining beaten eggs then cover with aluminum foil.
  4. Steam over high heat for about 40 minutes or until hardinera has fully set. Loosen sides of hardinera from pan and invert on a serving plate.

Makes 8-10 servings.
