Chicken Sotanghon Soup


1. Heat oil in a saucepan. Sauté onion then add flaked chicken and cook over moderate heat. Add patis and mix well.
2. Pour chicken stock and boil. Reduce heat to simmer and add sotanghon noodles. Season to taste and serve topped with spring onions and garlic.

Tip: The secret to a great soup is a flavorful stock. Add carrots and leafy greens to make it a complete meal.

Makes 5 to 6 servings.
