CHICKEN BBQ WITH CUCUMBERS & CABBAGE ON WARM PITA


Ingredients:

1 tbsp GOLDEN FRY PALM OIL
4 pc MAGNOLIA CHICKEN STATION TIMPLADOS BARBECUE LEG QUARTERS
1 (125 g) pack plain yogurt
2 cloves garlic, chopped
1 tbsp lemon juice or calamansi juice
4 pc whole wheat pita bread
1 (100 g) cup cucumber, thinly sliced
1 (80 g) cup red cabbage, thinly sliced

Procedure:

  1. Heat oil in a pan or grille, cook chicken for 8 minutes on each side or until cooked through. Set aside.
  2. In a bowl, combine yogurt, garlic, and lemon juice. Mix well and set aside.
  3. In a pan, heat pita bread for 2 minutes per side or until completely warm, and then slice in a half.
  4. Arrange chicken, cucumber, cabbage, pita and yogurt sauce on a platter. To consume, shred some chicken meat and place inside the pita with some vegetables and sauce.

Makes 4 servings.
