CHICKEN AIOLI


Ingredients:

4 pc deboned MAGNOLIA CHICKEN BREASTS (from 2 whole pieces, about 400 grams raw weight)

Marinade:

1/4 tsp pepper
1/2 tsp iodized salt
1 tbsp minced garlic
2 tsp Worcestershire sauce
3 tbsp extra virgin olive oil

Sauce:

1/2 tsp Worcestershire sauce
1/4 tsp iodized fine salt
3 tbsp calamansi juice
2 tbsp minced garlic
pepper
1/2 cup mayonnaise
1 tbsp chopped parsley

Procedure:

  1. For the sauce, mix all ingredients in a bowl. Chill until ready to use.
  2. In a bowl, combine salt, pepper, garlic, Worcestershire sauce and olive oil. Marinate chicken for at least 1 hour.
  3. Pan-grill chicken breasts on a thick bottom skillet over moderate heat until cooked through. Remove from heat and serve warm with prepared sauce.
  4. Mix all ingredients in a bowl. Chill until ready to use.
Makes 4 servings.
