CHEESY UBE PANDESAL


Ingredients:

FOR THE DOUGH

3/4 (200 g) cup water
1/4 (70 g) cup ube halaya
2 tbsp (30 g) cup ube flavor & color
2 (100 g) pc MAGNOLIA BROWN EGGS, slightly beaten
1/4 (50 g) cup sugar
1-1/2 (10 g) tsp iodized fine salt
5 (650 g) cups MAGNOLIA ALL PURPOSE FLOUR
1 (10 g) tbsp EMPEROR’S BEST INSTANT YEAST
1/2 (113 g) cup MAGNOLIA GOLD BUTTER UNSALTED, softened

FOR THE FILLING

2 (165 g each) packs MAGNOLIA QUICKMELT CHEESE, each pack cut into 12 slices

FOR THE COATING

1 (150 g) cup breadcrumbs

Procedure:

  1. Preheat oven to 350°F. Line baking sheet with baking/wax paper. Set aside.
  2. Combine dough ingredients in a mixer and knead for 8-12 minutes until the dough is developed. Dough surface should be smooth and free from any lumps.
  3. Cover dough with a damp cloth/cling wrap and let stand for 30 minutes or until double in size.
  4. Divide dough into 24 portions then shape into balls. Using a rolling pin, flatten each dough ball into a rectangular shape and place a stick of cheese in the center. Roll dough into a log shape.
  5. Coat with breadcrumbs and place dough on the baking sheet and let stand again until double in size (about 30-45 minutes). Bake for about 8-10 minutes or until golden brown. Cool completely.

Makes 24 pieces.
