CHEESY MAMON


Ingredients:

For the Dough

1-1/8 cups PRINCESS CAKE FLOUR
1-1/2 tsp BAKE BEST BAKING POWDER
1/2 tsp iodized fine salt
2/3 cup sugar
1/4 cup corn oil
4 pc MAGNOLIA BROWN EGGS, separate egg yolks from whites
6 tbsp water
1 tsp vanilla extract
1/4 tsp cream of tartar

Topping

1/2 cup melted MAGNOLIA GOLD BUTTER UNSALTED, plus extra for greasing
1 (165 g) pack grated MAGNOLIA QUICKMELT CHEESE or MAGNOLIA CHEEZEE
1/4 cup sugar

Procedure:

  1. Preheat oven to 350°F. Grease 4 inch diameter mamon molds. Set aside.
  2. In a bowl, combine flour, baking powder salt, 1/3 cup sugar, oil, egg yolks, water and vanilla. Mix well and set aside.
  3. Using a mixer, beat egg whites and cream of tartar to soft peak stage. Gradually add remaining sugar and continue beating until medium stiff peak stage.
  4. Combine the two mixtures by carefully folding in egg white foam into cake batter until fully incorporated. Pour about 1/4 cup batter per mold. Bake for 12 to 15 minutes or until toothpick inserted in the center comes out clean.
  5. Remove from molds. Brush melted butter on the surface, and then top with grated cheese and sprinkle with sugar.

Makes 12 pieces.
