CHEESY BAKED FISH


Ingredients:

1 cup (120 g) MAGNOLIA ALL PURPOSE FLOUR
1 tsp iodized fine salt
1/2 kg lapu-lapu or tilapia fillets
1 cup cooking oil
1 cup MAGNOLIA REAL MAYONNAISE
1/2 cup (73 g) capers, finely chopped
1/2 cup (60 g) fine breadcrumbs
1 tsp white pepper
1 pack (160 g) MAGNOLIA QUICKMELT CHEESE, grated

Procedure:

  1. In a large glass bowl, mix together flour and salt. Dredge fish in flour mixture.
  2. Heat oil in a large nonstick pan and lightly fry fillets until golden brown.
  3. Preheat oven to 180oC (350°F). Meanwhile, in a separate bowl, combine mayonnaise, capers, breadcrumbs and white pepper.
  4. Place cooked fish in a square oven proof baking dish and spread mayo mixture on top.
  5. Top with grated cheese and bake for 15 to 20 minutes or until cheese melts and is slightly brown.

Makes 4-5 servings.
