CHEESE UBE HALAYA PANDESAL


Ingredients:

FOR THE DOUGH

1 (250 g) cup water
3 (30 g) tbsp ube powder
2 (30 g) tbsp ube flavor
1/2 (100 g) cup sugar
2 (50 g each) pc MAGNOLIA BROWN EGGS, slightly beaten
1 (15 g) tbsp EMPEROR’S BEST INSTANT YEAST
5-1/2 (650 g) cups PUREFOODS BARON ALL PURPOSE FLOUR
1/2 (8 g) tbsp iodized fine salt
1/2 (113 g) cup MAGNOLIA GOLD BUTTER UNSALTED, softened

FOR THE FILLING

1 (165 g) pack MAGNOLIA CHEEZEE, cut into 48 slices
2 (480 g) cups ube halaya

FOR THE COATING

2 (240 g) cups breadcrumbs

Procedure:

  1. Line baking sheet with parchment paper. Set aside.
  2. Combine dough ingredients in a mixer and knead for 8-12 minutes until the dough is developed. Dough surface should be smooth and free from any lumps.
  3. Cover dough with a damp cloth/cling wrap and let stand for 30 minutes or until double in size.
  4. Divide dough into 48 portions (at 25 grams dough weight) then shape into balls. Flatten each dough and place ube and cheese in the center. Seal and form into a round shape.
  5. Coat with breadcrumbs and place dough on the baking sheet and let stand again until double in size, about 30 to 45 minutes. Preheat oven to 350oF. Bake for about 8-10 minutes or until golden brown. Cool completely.
