Cheese Macaroons


  1. Preheat oven to 350o Line 4 dozens small muffin pans with muffin liners. Set aside.
  2. Using a mixer, cream margarine and sugar for 5 minutes at medium speed. Add eggs one at a time, beating well after each addition.
  3. Add condensed milk. At low speed, add flour and desiccated coconut then fold in 3/4 of grated cheese and mix well.
  4. Pour into prepared pans and top with remaining cheese. Bake for 25 minutes or until light golden brown in color. Cool on wire racks.

Makes 48 pieces.
