Makes 48 pieces.
- Preheat oven to 350o Line 4 dozens small muffin pans with muffin liners. Set aside.
- Using a mixer, cream margarine and sugar for 5 minutes at medium speed. Add eggs one at a time, beating well after each addition.
- Add condensed milk. At low speed, add flour and desiccated coconut then fold in 3/4 of grated cheese and mix well.
- Pour into prepared pans and top with remaining cheese. Bake for 25 minutes or until light golden brown in color. Cool on wire racks.
