BUTTERMILK GLAZED FRIED CHICKEN WITH MASHED POTATOES


Ingredients:

1 (10 pc) kg MAGNOLIA CHICKEN STATION RECADO CUT
1/2 tsp iodized fine salt
1 tsp pepper
2 tbsp vinegar
1 pc MAGNOLIA BROWN EGG, slightly beaten
1 cup cornstarch
1 (4 c) L cooking oil, for frying
1/2 cup DARI CREME BUTTERMILK, melted

Mashed Potatoes

1 kg potatoes, scrubbed clean
3/4 cup MAGNOLIA FULL CREAM MILK
1/2 cup DARI CREME BUTTERMILK
1/2 tsp iodized fine salt
1/4 tsp pepper

Procedure:

  1. In a bowl, mix chicken, salt, pepper and vinegar. Set aside to marinate for 1 hour.
  2. Add egg and mix well. Dip marinated chicken in cornstarch until coated and dust off any excess cornstarch.
  3. Fry chicken in a preheated pan with oil for 12-15 minutes or until golden brown and cooked through. Dip or brush chicken with margarine before serving.
  4. To make mashed potatoes, boil potatoes in a pot until tender. Drain.
  5. Mash with its peel in a large bowl with milk and margarine. Season with salt and pepper. Serve with fried chicken.
