BRAISED PORK KNUCKLES WITH BLACK BEAN SAUCE


Ingredients:

1-1/2 kg MONTEREY PORK PATA, sliced into 1-inch thick pieces
1/4 cup soy sauce
1/4 cup cooking oil
1 cup chopped white onions
2 tbsp minced garlic
3 tbsp peeled and thinly sliced ginger
2 tbsp black bean sauce
4 cups chicken stock
iodized fine salt and pepper to taste
2 tbsp sesame oil
chopped green onions for garnish

Procedure:

  1. In a bowl, marinate pork pata in soy sauce for at least 30 minutes.
  2. In a wok over medium heat, add oil and stir-fry onions, garlic, ginger and black bean sauce. Add pata slices to wok then the chicken stock. Bring to a boil then lower heat to simmer, covered, until tender. Season with salt and pepper.
  3. Remove from heat and drizzle with sesame oil. Garnish with spring onions upon serving.
Makes 8-10 servings.
