BEGUCAN BABI (Binagoongan na Baboy)


Ingredients:

1 kg MONTEREY PORK MASK OR PORK LIEMPO
1/2 cup pork lard
1/4 cup atsuete (annatto seeds)
1 tsp minced garlic
1/2 cup chopped onions
2 pc tomatoes, seeded and diced
1 cup bagoong alamang
1/2 cup vinegar
1/2 cup brown sugar
1 tsp whole black pepper
5 pc siling haba (finger chili)
2 pc grilled eggplant
10 pc steamed okra

Procedure:

  1. Boil whole pork pieces until tender or until broth has almost evaporated. Set aside and let cool. When enough to handle, debone pork and cut to small pieces.
  2. In a frying pan, heat pork lard and atsuete, stirring constantly for one minute or until oil has absorbed coloring of atsuete. Remove atsuete seeds and keep the oil in frying pan.
  3. Sauté garlic, onions, tomatoes and bagoong. Add pork, vinegar, sugar, pepper and chili pieces. Let simmer for 10-15 minutes. Serve with grilled eggplants and okra.
