BEEF SIRLOIN WITH HERBED BUTTER


Ingredients:

2 tbsp cooking oil
1/4 tbsp MAGNOLIA GOLD BUTTER UNSALTED
4 pc (150 g each) MONTEREY BEEF SIRLOIN STEAK
1/2 tbsp iodized fine salt
1/2 tbsp pepper
1/2 tbsp paprika

Herbed Butter:

1 pack (225 g) MAGNOLIA GOLD BUTTER SALTED , softened
1 stalk (4.5 g) cilantro, chopped (1 tbsp)
1 tbsp thyme
1 tbsp rosemary
1/2 tsp pepper
1 pack (250 g) PUREFOODS BACON CRUMBLE, fried

Garnish:

150 grams haricovert (French beans) or Baguio beans, trimmed then blanched
9 pc (150 g) cherry tomatoes, sliced in half
sprigs fresh thyme or rosemary

Procedure:

  1. Mix herbed butter ingredients in a bowl. Transfer to a plastic wrap, roll and make a log. Secure both ends by twisting the cling wrap. Freeze to set.
  2. Heat oil and butter in a pan over high heat. Season beef with salt, pepper, and paprika then brown beef about 1/2 minute on each side for medium rare doneness.
  3. Slice 3 inches of the compound butter and place on top of beef while hot. Serve with desired sidings and garnish.

Makes 4 servings.
