BANANA CUPCAKES


Ingredients:

1/2 cup BAKER’S BEST MARGARINE
1 cup + 2 tbsp brown sugar
2 pc MAGNOLIA BROWN EGGS
3 pc very ripe lakatan bananas, mashed
1/4 cup MAGNOLIA ALL-PURPOSE CREAM
2 tbsp rum
1 tsp vanilla extract
2 cups MAGNOLIA ALL PURPOSE FLOUR
1-1/2 tsp baking soda
1 tsp iodized fine salt
1/2 tsp cinnamon powder
1/2 cup raisins

Procedure:

  1. Preheat oven to 350°F. Grease and flour muffin pans.
  2. Cream butter and brown sugar until light and fluffy. Add eggs one at a time, mix until smooth.
  3. Combine banana puree, cream, rum and vanilla extract and pour over butter and egg mixture.
  4. Combine flour, baking soda, salt and cinnamon together and gradually add it to the mixture. Fold in raisins, and mix very well.
  5. Pour into prepared pans and bake for 30 mins or until done.

Makes 1 dozen.
