BAKED MUESLI CHEESE CAKE


Ingredients:

Crust

1 cup muesli, toasted
1/4 cup brown sugar
1 tsp cinnamon powder
1/4 cup MAGNOLIA GOLD BUTTER UNSALTED, melted

Topping

1/2 cup muesli, toasted
1/4 cup brown sugar
1 tsp cinnamon powder
2 tbsp MAGNOLIA GOLD BUTTER UNSALTED, melted

Filling

2 (225 g each) packs MAGNOLIA CREAM CHEESE, softened
1 cup sugar
2 tsp vanilla extract
1 tbsp lemon juice
2 tsp grated lemon rind
6 pc MAGNOLIA BROWN EGGS, use 3 whole eggs + 3 egg yolks only
1 cup yogurt
1/4 cup MAGNOLIA ALL PURPOSE FLOUR

Procedure:

  1. Preheat oven to 275°F and line nine 3” x 3” round mini pans. Set aside.
  2. For the crust, combine muesli, brown sugar, cinnamon and butter in a mixing bowl. Mix well.  Divide and press onto mini pans. Set aside.
  3. For the topping, mix ingredient and set aside.
  4. Beat cream cheese and sugar until smooth, light and fluffy. Add vanilla, lemon juice, lemon rind, eggs, egg yolks, yogurt and flour. Beat until mixture is smooth. Divide and pour into prepared pans. Top each with prepared muesli topping.
  5. Bake in a bain marie for about 1 hour. Turn oven off. Leave cheesecake inside the oven for 30 minutes more. Cool completely. Chill at least 4 hours before unmolding the cheesecake.
Makes 9 servings.
