BACON JAM


Ingredients:

1 pack (500 g) PUREFOODS CLASSIC HONEYCURED BACON, cut into 1-inch strips
1 pc (120 g) onion, finely chopped
2 cloves garlic, minced
1/2 cup brown sugar
1/4 cup corn or maple syrup
1/3 cup white or apple cider vinegar
1 tsp chili powder

Procedure:

1. In a saucepot, cook bacon in its own fat until crispy. Drain excess oil on paper towels and set aside.
2. In the same pan, sauté onion until caramelized (and brown in color) and then add garlic, brown sugar, syrup, vinegar, chili powder and bacon.
3. Simmer uncovered over low heat until reduced and thick in consistency, while stirring occasionally. 
4. Remove from heat and cool before transferring to sterilized jars or covered food container.

Makes about 1 cup.

Note/s:

  • Bacon jam stored in the chiller can keep up to 4 weeks.
  • best served with crackers or bread.
