Preheat oven to 350°F. Line cookie sheets with baking paper. Set aside.
In a bowl, combine oatmeal, flour, salt, baking powder and baking soda. Set aside.
In a small saucepan, melt 2 tbsp butter then add cubed apples, brown sugar and cinnamon. Continue cooking until apples are tender. Let cool.
In a separate bowl, cream remaining butter and white and remaining brown sugar until light fluffy. Add eggs one at a time beating well after each addition. Add vanilla. Fold in flour mixture until well combined but not over mixed. Add cooked apples.
Drop tablespoonfuls of the mixture 2” apart to allow spreading. Bake for 15 minutes or until golden brown. Let cool.
Makes 35-40 pieces.
