ADOBO WITH LIVER SAUCE


Ingredients:

1/2 cup soy sauce
1 pc bay leaf (laurel)
1 tbsp pepper
1 head garlic, crushed
1/2 kg MAGNOLIA CHICKEN STATION CUT UPS
1/2 kg MONTEREY PORK KASIM ADOBO CUT
3/4 cup cane vinegar
4 cups water
4 cups MAGNOLIA CHICKEN LIVER, boiled and chopped

Procedure:

  1. Combine all ingredients in a saucepan. Cook over high heat until mixture comes to a boil. Reduce heat to medium and simmer while covered for 45 minutes.
  2. Take out the chicken liver and mash. Add mashed liver back to adobo and continue to cook mixture for another 5 minutes until sauce is reduced and thick.

Makes 5-6 servings.
