SMOKED PEPPER CHICKEN HUNTER STYLE


Ingredients:

2 tbsp cooking oil
1 (1 kg) pc MAGNOLIA CHICKEN TIMPLADOS ROASTERS SMOKED PEPPER, cut into 8 pieces
1 (150 g) pc onion, sliced
2 cloves garlic, sliced
6 (73 g) pc fresh brown mushrooms, sliced
1/3 cup white wine
1 (400 g) can diced tomatoes
1 (90 g) pc red bell pepper, sliced
1 (90 g) pc green bell pepper, sliced
1 (1/4 cup) bunch parsley, chopped

Procedure:

  1. Heat oil in a pan. Fry chicken until golden brown. Set aside.
  2. In the same pan, sauté onion, garlic, and mushrooms.
  3. Add wine and simmer for 2 minutes. Add tomatoes and chicken. Cover and simmer for 30 minutes, stirring occasionally.
  4. Add bell peppers and simmer for a minute. Sprinkle parsley before serving.

Makes 4 servings.
(Yield: 8 pieces/2 pieces per serving)
