RED WINE BRAISED CHICKEN


Ingredients:

1 pc MAGNOLIA WHOLE CHICKEN, cut into 4
2 tbsp iodized fine salt
1 tbsp ground pepper
1 cup cooking oil
3 tbsp MAGNOLIA GOLD BUTTER UNSALTED
3 tbsp chopped garlic
3 tbsp chopped onions
3 tbsp chopped celery
3 tbsp chopped carrots
1 (250g) pack PUREFOODS CLASSIC HONEYCURED BACON, sliced
3 cups red wine
4 cups chicken stock
1 tbsp dried thyme
2 pc bay leaf (laurel)
1/2 kg blanched baby potatoes (optional)
3 pc MAGNOLIA BROWN EGG, boiled, peeled and sliced in half (optional)

Procedure:

  1. Season both sides of the chicken with salt and pepper.
  2. Heat oil in a pan. Brown chicken skin side down for 1 minute on each side. Set aside.
  3. In the same pan, add butter. Sauté garlic, onions, celery, carrots and bacon for 3 minutes. Add wine, stock, thyme, bay leaf and chicken. Reduce heat to low. Cook covered until chicken is tender.
  4. Transfer to a platter then top with baby potatoes and sliced egg.
Makes 4-5 servings.
