PENNE ITALIANNI (PENNE WITH PEPPERONI AND ROASTED PEPPERS)


Ingredients:

2 tbsp MAGNOLIA GOLD BUTTER UNSALTED
2 tsp minced garlic
1/4 cup sliced PRIMO D' ITALIA PEPPERONI
1 cup chunky tomato sauce
1 tsp dried basil leaves
1/4 tsp ground oregano
1/8 tsp pepper
1/4 tsp iodized fine salt
2 tsp sugar
1 pc red bell pepper, roasted then julienned
1 pc green bell pepper, roasted then julienned
200 g tri-colored penne noodles, cooked according to package directions
1/2 pack cottage cheese
1/2 cup grated MAGNOLIA QUICKMELT CHEESE or MAGNOLIA GOLD EDAM CHEESEBALL

Procedure:

  1. In a pan, melt butter and sauté garlic. Add pepperoni and cook for about 10 minutes. Add the tomato sauce and season with the herb and spices. Add roasted bell peppers. Set aside.
  2. Preheat oven to 350°F.
  3. Toss penne with sauce and cottage cheese. Transfer the noodle-sauce mixture into a well-greased square baking dish. Top pasta with grated cheese.
  4. Bake for 15 minutes.

Makes 2-3 servings.
