PARMESAN-GARLIC CHICKEN WITH POTATO-EGG SALAD

- In a bowl, combine mayonnaise, mustard, salt, pepper, onion, celery and pickle relish. Mix well then add potatoes and eggs. Chill until ready to serve.
- In a bowl, combine garlic powder and Parmesan cheese. Toss fried chicken pieces until well coated.
- Serve chicken with potato-egg salad.
Makes 5 servings.
(Yield: 5 pc chicken & 5 cups salad/1 pc chicken & 1 cup salad per serving)
Tip: Tone down onion flavour by soaking onion in warm water for 10 minutes then drain.
