ORANGE CHICKEN TOP RICE


Ingredients:

4 pc MAGNOLIA CHICKEN STATION BREASTS or THIGH FILLETS
1 tsp iodized fine salt
1 tsp pepper
1 tsp sesame oil
1 cup cornstarch
1 pc MAGNOLIA BROWN EGGS, use egg yolk only and beaten
cooking oil for frying

SAUCE:

2 tbsp STAR MARGARINE CLASSIC
1 tbsp crushed garlic
2 tsp grated ginger
1 cup powdered orange juice, dissolved in 2 cups water
1 cup cornstarch
1 tsp iodized fine salt
1 tsp pepper
1 stalk green onion chopped for garnish

Procedure:

  1. Marinate chicken in salt, pepper, sesame oil and egg whites then dredge each piece cornstarch. Deep-fry in oil. Drain on paper towels. Set aside.
  2. For the sauce, put margarine in a sauce pan with garlic. When garlic is brown, add remaining ingredients. Stir until boiling then add cooked chicken. Mix for a few seconds.
  3. Portion into 4 bowls of rice. Top with green onion.

Makes 4 servings.
