OATMEAL BREAD PUDDING


Ingredients:

1/2 cup (112.5 g) MAGNOLIA PURE FRESH MILK
2 pc (100 g) MAGNOLIA BROWN EGGS, beaten
12 pc (384 g) day old sliced bread, edges trimmed and cubed
1/4 cup (40 g) raisins
1/4 cup (20 g) quick cooking oatmeal
150 grams fruit cocktail in syrup
1/4 cup (56 g) MAGNOLIA GOLD BUTTER SALTED, melted

Procedure:

1. Preheat oven to 180oC (350°F).
2. Combine milk, eggs, bread, raisins, 3 tbsp of oatmeal, fruit cocktail and syrup, and melted butter in a bowl. Mix well.
3. Place mixture in 4 separate oven proof ramekins and cover each with aluminium foil.
4. Bake for 30 minutes in a bain marie.
5. Remove foil in the last 5 minutes of baking and set oven to broil. Allow the top to brown.
6. When done, remove from oven and cool for about 20 minutes.
7. Top with remaining oatmeal. Serve warm or chilled.

Makes 4 servings.

Note/s:

  • Bain marie refers to water bath. Place ramekins in a deep baking dish and add hot water until half level of ramekin.
