GRILLED COCONUT CHICKEN WITH SPAGHETTI SWEET POATO


Ingredients:

1 kg MAGNOLIA CHICKEN STATION BREAST FILLETS, butterfly cut
3 tbsp calamansi juice
3 tbsp marsala paste or curry paste
1 kg sweet potatoes, thinly sliced
1 tbsp MAGNOLIA GOLD BUTTER UNSALTED
1/4 cup desiccated coconut, toasted
4 pc MAGNOLIA BROWN EGGS, poached
1 tsp iodized fine salt

Procedure:

  1. Marinate chicken with calamansi juice and curry paste. Chill for 15 minutes.
  2. Sauté sweet potatoes in butter until crisp. Add coconut.
  3. In a separate pan, grill or pan-grill chicken using medium heat until fully cooked.
  4. 4. Serve chicken with sweet potato spaghetti and poached eggs. Season with salt.
Makes 10 servings.
