FRUIT N' SPICE BUNS


Ingredients:

Sponge

2/3 cup lukewarm water
1/2 tbsp EMPEROR’S BEST INSTANT YEAST
1-1/2 cups bread flour

Dough

2-3/4 cups bread flour
3 tbsp powdered milk
1 tsp iodized fine salt
1/3 cup sugar
2/3 cup water
1 pc MAGNOLIA BROWN EGG
1/4 tsp vanilla
1/2 cup softened MAGNOLIA GOLD BUTTER

Filling

1/2 cup brown sugar
1 tsp cinnamon
1/2 cup glazed fruits
1/2 cup walnuts
1/4 cup raisins
1/4 cup softened MAGNOLIA GOLD BUTTER

Glaze

1 cup sugar
1/4 cup water
1/4 cup MAGNOLIA GOLD BUTTER
1/4 cup PRIMERA LIGHT BRANDY

Procedure:

  1. In a small bowl, combine water and yeast. Set aside for 2-3 minutes until mixture is bubbly. Blend in flour. Cover and let rest in a warm place for 1 hour.
  2. Prepare the dough. Combine all the dry ingredients. Make a well and add water, egg and vanilla. Mix well with hand until smooth and add softened butter.
  3. Mix dough and sponge well. Knead on a floured board until smooth. Shape into a ball and put in a large greased bowl. Turn dough to grease all sides. Cover with a clean dry towel and set in a warm place to rise until double in bulk, about 1 1/2 hours.
  4. Grease a 9-1/2" tube pan with softened butter and sprinkle generously with brown sugar. Punch down dough to release air. Roll dough over a lightly floured surface into a 25" x 10" rectangle.
  5. Brush with softened butter and sprinkle filling mixture. Roll dough like jelly roll starting on the wider side of the rectangle. Pinch seam to seal. Cut dough crosswise into 10 equal pieces. Place side by side in a tube pan.
  6. Cover and let rise in a warm place until it doubles in size, about 1-1/2 hours. Bake in a preheated 375°F oven for 35 minutes. Glaze.
  7. Prepare glaze by combining water and sugar. Caramelize to a golden brown color, blend in butter and brandy.
Makes 10-12 servings.
