DRUNKEN CHICKEN


Ingredients:

1 (1.2-1.5 kg) pc whole MAGNOLIA CHICKEN, rinse and pat-dry
2 stalks crushed leeks
2 (50 g) slices crushed ginger
1-1/2 tbsp iodized fine salt
1-1/2 cups Shao Xing rice wine or regular rice wine

Procedure:

  1. In a bowl, mix leeks, ginger and 1/2 tbsp salt. Rub mixture onto chicken inside and outside of the cavity. Marinate covered for at least 1 hour in the refrigerator.
  2. Place chicken into a pot and fill with water enough to cover the chicken. Add remaining salt. Cover and bring to a boil then simmer over low heat for 10 minutes.
  3. Turn off heat and allow chicken to stand in the pot, covered, for 5 minutes then remove chicken and reserve 1 cup of broth. Discard the rest.
  4. Cut the chicken into 6 or 8 pieces. Arrange chicken, skin down in a wide, shallow bowl. Pour the chicken broth and Shaoxing wine all over. Cover and place in the chiller for one day.
  5. To serve, drain off the marinade. Arrange chicken pieces on a serving plate and serve.
