DEEP FRIED BEEF RIBS


Ingredients:

1 cup whole garlic, pressed
1/2 cup ginger, pressed
3 tbsp peppercorn
2 pc bay leaf (laurel)
1/2 cup rock salt
3 L water
1/2 kg MONTEREY BEEF SHORT RIBS or KALDERETA CUT
1 L cooking oil
1/2 cup fish sauce
1 tbsp five spice powder
1 cup cornstarch

Procedure:

  1. In a casserole, combine short ribs / kaldereta cut, garlic, ginger, peppercorns, bayleaves, rock salt and water.  Cover and bring to a boil. Adjust heat to low. Cook beef until fork tender. Set aside cooked beef when done.
  2. Heat oil in a pan. Season cooked beef with fish sauce. Set aside. Combine five spice powder and cornstarch. Roll in marinated cooked beef in cornstarch mixture and deep fry in the hot oil until golden brown. Drain beef on paper towel. Transfer to a plate. Set aside.
Makes 4 servings.
