CRISPY SPICE CHICKEN WITH SPICED SALT AND PICKLED RADISH


Ingredients:

1 (500 g) pack MAGNOLIA CHICKEN TIMPLADOS FRIED CHICKEN cooked according to package directions

Spiced salt:

1/4 tsp white pepper
1 tbsp sugar
1/4 tsp cayenne pepper
1/4 tsp five spice powder
1/2 tsp iodized fine salt
pinch of cloves

Pickled radish:

1 cup sliced radish
1/4 cup sugar
1/4 cup water
1 tbsp sea salt
1/4 tsp Korean chili powder
1/4 cup vinegar

Procedure:

  1. Deep-fry chicken till crisp. Drain on rack.
  2. While hot, serve a small plate on the side with spiced salt or sprinkle fried chicken liberally with spiced salt and serve immediately.
  3. For the spiced salt, work with mortar and pestle until fine powder is produced.
  4. For the pickled radish, combine all ingredients and mix well and keep chilled in a tightly sealed container, before serving.

Makes 5 servings.
