CREAM OF BROCCOLI SOUP

- Melt butter in a saucepan, Sauté onions and broccoli. Pour in stock and cook covered for 10 to 15 minutes.
- Remove from heat and transfer broccoli in a food processor or a blender. Puree until a coarse mixture is achieved. Return mixture to saucepan and add cream. Continue to cook over moderate heat.
- Place flour in a small bowl. Stir in 1/3 cup of soup mixture and mix well until there are no more lumps. Return mixture to saucepan. Continue to cook until slightly thick. Season with pepper to taste.
- Pour soup in individual serving bowls. Top with bacon.
Makes 4 servings.
