CREAM OF BROCCOLI SOUP
Melt butter in a saucepan, Sauté onions and broccoli. Pour in stock and cook covered for 10 to 15 minutes.
Remove from heat and transfer broccoli in a food processor or a blender. Puree until a coarse mixture is achieved. Return mixture to saucepan and add cream. Continue to cook over moderate heat.
Place flour in a small bowl. Stir in 1/3 cup of soup mixture and mix well until there are no more lumps. Return mixture to saucepan. Continue to cook until slightly thickened. Season with pepper to taste.
Pour soup to individual serving bowls. Top with bacon.
