CHOCOLATE CHIP CHEESECAKE


Ingredients:

CRUST:

1 cup chocolate cookie crumbs or crushed LA PACITA OATMEAL COOKIES or crushed LA PACITA GRAHAM CRACKERS
1/3 cup DARI CRÉME CLASSIC, melted

FILLING:

1 (225 g) pack MAGNOLIA CREAM CHEESE, softened
3/4 cup sugar
3 pc MAGNOLIA BROWN EGGS
1/2 cup sour cream
1 tsp vanilla extract
1/4 cup MAGNOLIA ALL PURPOSE FLOUR
1 cup semi-sweet chocolate chips

GARNISH:

1 (250 mL) pack MAGNOLIA ALL-PURPOSE CREAM, chilled and whipped
mint leaves for garnish

Procedure:

  1. Preheat oven to 325°F.
  2. Combine cookie crumbs and margarine. Press onto a 9” round pan. Set aside.
  3. Beat cream cheese at low speed for 30 seconds. Add sugar and beat at low speed for another 30 seconds. Add eggs one at a time with 30 seconds interval in between each addition. Add sour cream and the vanilla. Fold in flour then chocolate chips. Pour over crust.
  4. Bake in a baine-marie* for about 55 minutes or until firm on the sides but still soft in the center.
  5. Let cool before removing from pan. Chill. Garnish with whipped cream and mint leaves.
*Baine marie: hot water bath Makes 6-8 servings.
