CHICKEN JAMBALAYA


Ingredients:

2 tbsp STAR MARGARINE CLASSIC
3/4 cup chopped PUREFOODS CLASSIC HONEYCURED BACON
1 tbsp minced garlic
1 (100 g) pc onion, chopped
1 (50 g) pc red bell pepper, chopped
1-3/4 cups chunky fresh tomato sauce
1 cup uncooked long grain rice
2 pc chicken bouillon cubes, dissolved in 4 cups water
1/8 tsp ground ginger
1/8 tsp allspice
1/2 tsp dried thyme
1/2 tsp cayenne pepper
1 tsp hot sauce
2 cups boiled and cubed MAGNOLIA CHICKEN STATION BREAST FILLETS
2 tbsp chopped green onions

Procedure:

  1. Melt margarine in a deep saucepan. Sauté bacon and cook for 1 minute. Add garlic and sauté until fragrant. Add onion and bell pepper. Cook until tender.
  2. Add tomato sauce. Mix well then let simmer. Add rice. Slowly pour dissolved chicken stock while stirring. Bring to a boil then let simmer over low heat.
  3. Season with ginger, allspice, thyme, cayenne and hot sauce. Continue cooking until rice is tender. Add chicken and green onions. Mix well.
Makes 2-3 servings.
