CHICKEN BBQ WITH GRAPES AND OLIVE SALAD


Ingredients:

Chicken

1 pc whole MAGNOLIA CHICKEN
1 PC MAGNOLIA CHICKEN STATION WHOLE CHICKEN
1 tbsp fish sauce
1 tbsp hot sauce
3 cloves garlic, crushed
1 tsp white pepper

Dressing

5 pc cilantro stalks with leaves, chopped
3 pc shallots, sliced
2 tbsp Thai fish sauce
2 tbsp lemon juice
1 cup palm sugar (panutsa)
1 tbsp chopped red bell pepper
1 pc sili labuyo, sliced
1 tsp finely chopped lemongrass (tanglad)

Salad

1 cup assorted seedless grapes, halved
1 tbsp sliced green olives
1 tbsp sliced black olives
1 tbsp capers
2 tbsp sliced onions

Procedure:

  1. Marinate chicken in patis, hot sauce, garlic, and white pepper for a few minutes. Grill until cooked through. Cut into strips then set aside.
  2. Mix all dressing ingredients together. Set aside.
  3. In a bowl, combine grapes, olives, capers, and onions. Drizzle with dressing and top with chicken.
Makes 4-5 servings.
