- In a large pan over medium heat, combine the oil and flour. Mix until bubbly then lower the heat. Continue mixing to avoid burning.
- When mixture has turned slight dark brown in color, add in the onions and garlic. Bring heat to medium then add franks and chicken. Cook until chicken changes in color.
- Add okra and water. Bring mixture to a boil. Cook until chicken is done and the liquid thickened. Turn off heat then add in the lemon juice and season with salt, pepper and cayenne pepper.
