BRAISED SHARKSFIN WITH SHREDDED CHICKEN AND BAMBOO PITH


Ingredients:

300 g soup stock
5 g iodized fine salt
5 g chicken powder
20 mL soya oil
300 g Shark’s fin, boiled
30 g bamboo pith, shredded
75 g MAGNOLIA CHICKEN STATION BREAST FILLET, boiled and shredded
20 g cornstarch
5 mL sesame oil
Shao Xing wine

Procedure:

  1. Place soup stock in a casserole and let boil.
  2. Add salt, chicken powder and soya oil. Then add the shark’s fin, bamboo pith and shredded chicken.
  3. Thicken with cornstarch and add a drop of sesame oil and wine.
Makes 1 serving.
