BEEF STEW WITH GREEN PEAS AND LEMON RIND


Ingredients:

1/2 kg MONTEREY BEEF CUBES, cut into 1" cubes
2 tsp iodized fine salt
1 tsp pepper
1/4 cup MAGNOLIA ALL PURPOSE FLOUR
2 tbsp MAGNOLIA GOLD BUTTER UNSALTED
2 tbsp extra virgin olive oil
1/2 cup white wine
1 cup tomato sauce
4 cups beef stock
1/2 cup frozen green peas
1/2 tsp Italian herb seasoning
rind from 1 lemon

Procedure:

  1. Season beef with salt and pepper. Dredge in flour.
  2. Melt butter and heat olive oil in a saucepan. Pan-fry beef pieces until surface turns golden brown in color.
  3. Add white wine and let simmer until wine is reduced to half its original amount. Pour tomato sauce and beef stock. Allow to boil and let simmer covered until beef becomes tender.
  4. Remove lid and add peas. Season with dried Italian herb seasoning. Turn off heat and add rind of a lemon.
Makes 4 servings.
