BACON AND EGG ARROZ CALDO


Ingredients:

1 (200 g) pack PUREFOODS CLASSIC HONEYCURED BACON
1 (50 g) pc onion, sliced
2 cloves garlic, minced
1 (30 g) knob ginger, lightly pounded
1 cup glutinous rice (malagkit), washed
10 cups water or pork stock
5 pc MAGNOLIA BROWN EGGS, boiled and peeled

Procedure:

  1. In a pot, cook bacon in its own fat until crispy. Chop and set aside.
  2. In the same pot, saute onion, garlic and ginger. Stir in glutinous rice, half of bacon, and gradually pour in water/stock. Stir continuously until boiling. Cook until rice is tender and porridge thickens. Adjust water/stock as needed.
  3. Add eggs and remaining fried bacon before serving.

Makes 5 servings.
