BACON AND CHEESE BREAKFAST CUPS


Ingredients:

1 (115 g) pack PUREFOODS CLASSIC BACON HONEYCURED, finely chopped
1 (50 g) green bell pepper, finely chopped
1 (50 g) pc white onion, finely chopped
1 (170 g) can button mushrooms pieces and stems, drained
4 pc MAGNOLIA BROWN EGGS, beaten
1/2 cup grated MAGNOLIA QUICKMELT CHEESE

Procedure:

  1. Preheat oven to 350°F. Coat a 6-cup non-stick muffin pan with cooking spray. Set aside.
  2. In a non-stick frying pan, add bacon and cook until slightly browned. Add bell pepper and onion and cook for about 3-5 minutes.
  3. Transfer bacon mixture to a bowl and cool slightly. Add mushrooms to the pan and cook until tender, then add to the bowl with bacon mixture. Stir in eggs. Divide mixture into muffin cups.
  4. Sprinkle cheese on top then bake for 20 minutes or until eggs are set.
Makes 6 cups.
